This recipe is so versatile! If you don't care for raspberries substitute something else! Don't like the filling? Leave it out! They are so fun to make and they turn out gorgeous without too much effort! *I borrowed the buttercream recipe from the book Hello, Cupcake. Read more .* Ingredients:
cake |
preferred brand cake mix, any flavor (i used vanilla) |
ingredients to prepare cake, according to directions |
fresh or frozen raspberries (approx. 1 bag frozen, 2 pints fresh) |
buttercream filling |
1 16oz container marshmallow fluff |
3 sticks butter, softened and cut into 1-inch pieces |
1 tsp. vanilla extract |
1/2 c powdered sugar plus more, if necessary |
chocolate topping |
1 cup chocolate chips |
1 tsp. vegetable oil |
you will also need |
24 cupcake liners |
pastry bag with round tip (or a ziplock bag and a wooden skewer) |
Directions:
1. Prepare cake as directed. Line standard muffin pan with liners. Spoon cake batter into pan, just enough to cover the bottom of the cupcake liner. Place 3 berries in the middle of each bit of batter and top with remaining batter. Bake according to box directions. Make sure cupcakes are cooled completely before proceeding. 2. If you are using a pastry bag: 3. Prep the bag and fill with buttercream. Insert tip into top of each cupcake and pipe a small amount of frosting into the middle. 4. If you are using a ziplock bag and skewer: 5. Poke a hole into the center of each cupcake. Fill the ziplock bag with buttercream and snip of 1/4 on one corner. Insert open end into hole and fill center of cupcake with buttercream. 6. To top, dip each cupcake in the chocolate mixture or spread on top. Garnish with fresh berries if you desire. 7. For Frosting: 8. Spoon marshmallow fluff into a large bowl, beating on low. Gradually add butter pieces, beating well until smooth. Add remaining ingredients and stir well, scraping the sides of the bowl. Add more sugar, if necessary. 9. For Chocolate Topping: 10. Melt chocolate chips in microwave; add oil and stir well. |
