âI created these easy muffins after I'd stocked up on too much candy and banana bread mix,â writes Teresa Heavilin of Kokomo, Indiana. âMy family loves the peanut-butter surprise, and these muffins were a huge hit at a church potluck.â TIP: Not a fan of banana bread? Try a different quick bread and muffin mix instead. Ingredients:
1 package (14 ounces) banana quick bread and muffin mix |
1 cup milk |
1/2 cup canola oil |
2 eggs |
12 miniature peanut butter cups |
Directions:
1. Prepare banana bread batter according to package directions, using milk, oil and eggs. Fill greased muffin cups two-thirds full. Place a peanut butter cup in the center of each; spoon remaining batter over top. 2. Bake at 400° for 15-20 minutes or until a toothpick inserted into muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen. |
