Surprise Applesauce Cake

Applesauce, cocoa, and strongly brewed coffee make this one of the most delicious cakes! So very moist . It makes wonderful muffins too.
Ingredients:
2 cups flour
1/4 cup cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 teaspoons ground cinnamon
1 teaspoon allspice
1/4 teaspoon ground cloves
1 stick unsalted butter
1-1/2 cups packed dark brown sugar, (i have used light brown before)
2 large eggs, room temperature
1-1/2 cups applesauce
1/2 cup strongly brewed hot coffee (i used starbucks)
1-1/2 cups dark raisins
3/4 cup chopped walnuts, optional

1 stick unsalted butter
1/4 cup cocoa powder
1/4 cup strongly brewed hot coffee
2 cups powdered sugar
Directions:
1. Whisk all the dry ingredients in a large bowl
2. With an electric mixer, in a mixing bowl, cream butter and brown sugar until llight and fluffy
3. Add eggs, one at a time until fully mixed
4. Reduce mixer speed to low, adding flour mixture in thirds, alternating with the applesauce
5. Scrape sides of bowl, turning mixer to medium
6. Quickly add the hot coffee, beating until combined, about 30 seconds
7. Fold in by hand the raisins and walnuts
8. Pour batter into a greased and floured 6 cup Bundt cake pan OR pour into a greased and floured 9X13 baking pan
9. Bake at 350 degrees for 40-45 minutes OR until a toothphick inserted in the center comes out clean
10. Place cake in the pan on wire rack to cool
11. Gently run a knife around the edge of the pan
12. Remove cake, cool completely
13. If making a 9X13 pan, cake will remain in pan
14. ICING
15. In bowl, place butter, coffee, in microwave until butter is melted
16. Meanwhile in another bowl, sift cocoa and powdered sugar
17. Make a well in the center and pour in melted butter and coffee
18. Whisk until blended and smooth
19. Pour on top of cake, spreading
20. May be served immediately
21. *If making muffins, pour batter into greased or paper lined tins
22. Bake at 350 degrees for 20-25 minutes
