Suriname Chicken Curry

Serve with white rice, potato masala and string beans, pumpkin or cabbage as a vegetable. Cooking time is approximate.
Ingredients:
3 lbs chicken (cut into bite-sized pieces)
2 garlic cloves (more, to taste)
1 medium onion
2 tablespoons masala (store-bought, your own recipe or quick garam masala or madras curry powder) or 2 tablespoons curry powder (store-bought, your own recipe or quick garam masala or madras curry powder)
4 tablespoons sunflower oil or 4 tablespoons corn oil
chili peppers (optional) or jalapeno, to taste (optional)
1/2 teaspoon sugar
salt, to taste
water
Directions:
1. Heat the oil; add the onion and garlic, fry until translucent (take care not to scorch)
2. Add the masala powder or curry powder and stir in well.
3. Add the chicken with the peppers, sugar and salt (to taste)
4. Stir well until chicken is coated with onion/garlic mixture; add just enough water to cover the chicken.
5. Cover and cook over medium heat until tender.
