1 cup baby spinach |
1 cup chopped romaine lettuce |
1/4 cup shredded red cabbage |
1/2 cup sliced red pepper |
1/2 tomato, chopped |
1/4 cup chickpeas |
1/2 cup grated carrot |
1/4 avocado, cubed |
2 tablespoons extra virgin olive oil |
1 tablespoon balsamic vinegar |
Directions:
1. Toss all ingredients together but oil and vinegar. 2. Mix oil and vinegar and toss with salad. |
