SUPREME PASTA SALAD This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982. Ingredients:
1 pound penne or corkscrew pasta cooked and rinsed with cold water |
1 red bell pepper chopped |
1 green bell pepper chopped |
3 carrots sliced |
1 can artichoke hearts in water drained and quartered |
1 medium red onion diced |
dressing |
28 ounce can chopped tomatoes |
1 teaspoon dried basil |
2 teaspoons garlic powder |
1/4 cup balsamic vinegar |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Place pasta in a large bowl then add vegetables. 2. Combine all dressing ingredients and mix with pasta and vegetables. 3. Chill or serve at room temperature. |
