These are supreme alright. One of the best burgers I've ever had that wasn't on a grill. Ingredients:
2 shallots (or scallions) finely chopped |
4 tablespoons butter |
1 pound ground lean chuck |
1/4 pounds boiled ham, ground |
4 tablespoons ice water |
1 egg slightly beaten |
pinck of thyme |
freshly ground pepper |
flour |
1 tablespoon oil |
1/4 cup beef consomme |
1/4 cup hiram walker apricot flavored brandy |
2 more tablespoons butter |
Directions:
1. Saute the shallots. Drain. 2. In a bowl add shallots and the next 7 ingredients. 3. Wet hands and shape into patties; refrigerate for 1 hour. 4. Dust patties with flour; saute' until in oil until cooked and keep warm in oven. 5. Add consomme', Apricot Brandy, and cook 5 minutes. Add butter and pour over patties. Sprinkle with parsley |
