this spicy concoction is a take on my wife's chili recipe. i took it up a notch with the ingredients and spices to kind of confuse the tastebuds.(in a good way) all you'll need to add are some corn muffins and you've got a meal. Ingredients:
32 oz. pinto beans |
1 green bell pepper |
1 red bell pepper |
1 yellow onion cut in medium chunks |
1 red onion cut in medium chunks |
3 jalapenos diced |
3 garlic cloves diced |
1 cup of celery |
2 tbsp. red pepper flakes |
1/4 cup of brown sugar |
1 tomato diced |
1 small can of tomato paste |
Directions:
1. simmer beans for 1 hr. do not drain all of the liquid. 2. slowly stir in each ingredient. 3. bring the mixture to a boil, then simmer over low heat for 15-20 mins. be sure to stir at the midway point 4. salt and pepper to taste. |
