I found this recipe in the local food co-op's newsletter. It's a delicious and healthy twist on a traditional favorite. The quinoa makes it lightly crunchy. Ingredients:
1/2 cup quinoa |
1 cup yellow cornmeal |
1 cup unbleached all-purpose flour |
1/2 cup sugar |
1 tablespoon baking powder |
1 1/2 teaspoons salt |
1 large egg |
1 cup milk or 1 cup soymilk |
1/2 cup oil |
Directions:
1. Preheat oven to 375. 2. Lightly grease an 8x8 baking pan or a 12 muffin tin. 3. Mix dry ingredients together in a bowl: quinoa, cornmeal, flour, sugar, baking powder, salt. 4. Mix wet ingredients in a separate bowl: egg, milk, oil. 5. Stir wet ingredients into the dry ingredients until blended. Pour into pan or muffin tin. Bake pan 20-25 minutes, muffins for 18-20 minutes. Cool 10 minutes. Serve and enjoy! |
