Super Yummy Zucchini Muffins |

I can't believe these are healthy zuchini muffins Ingredients:
2 bananas, ripe |
2 cups zucchini |
1/2 cup sugar |
1 egg |
1 teaspoon vanilla |
1 cup walnuts, ground up |
1/3 cup butter, melted |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/2 cup white flour |
1/2 cup wheat flour |
1/2 cup flax seed meal |
Directions:
1. Preheat oven to 350 degrees. 2. Mash banana in a large bowl. 3. Put zucchini in a food processor until finely grated and add to bananas. 4. Add sugar and slightly beaten egg. 5. Add the melted butter, walnuts and vanilla. 6. In a separate bowl mix dry ingredients. 7. Add the dry ingredients to the wet ones, stir to mix. 8. Fill greased muffin tray with batter and bake for 20 minutes. |
