A hearty mild chilli, great for family gatherings and potlucks. My kids dislike kidney beans, but this delivers fiber and proteins with black beans and chick peas. You can add mushrooms, carrots, zucchini....But don't neglect the toppings, its like do it yourself sundaes...only healthier! Ingredients:
1 1/2-2 lbs lean ground beef |
2 onions, chopped, used separately |
4 -6 garlic cloves, chopped, reserve half |
28 ounces tomatoes |
3 tablespoons tomato paste |
2 tablespoons brown sugar |
8 ounces canned corn, drain and rinse |
19 ounces canned black beans, drain and rinse |
19 ounces canned chick-peas, drain and rinse |
1 1/2 cups ragu original pasta sauce |
1 -2 tablespoon chili powder |
1/2 teaspoon oregano |
1 teaspoon cumin |
1/2 teaspoon coriander |
1/2 teaspoon fresh ground pepper |
1 teaspoon salt |
crushed multigrain tortilla chips |
shredded sharp cheddar cheese |
sour cream |
chopped fresh chili pepper (or small can chopped green chillis) |
chopped fresh cilantro |
Directions:
1. In a large skillet or dutch oven brown beef with 1 chopped onion and 1/2 chopped garlic. Drain off fat, add tomatoes, paste, brown sugar, corn, black beans, chick peas, and Ragu, heat over medium stirring occassionally until bubbly and piping hot. 2. In a separate small, saute pan, over med-low, heat 1-2 tbsp olive oil, add remaining onion and garlic, saute until soft and clear. Add all spices, herbs and seasonings saute 2-3 minutes. Stir spice mixture into chilli, reduce heat to med-low and simmer at least an hour. 3. Serve hot in bowls, top with any or all of the suggested toppings! 4. Yummy! |
