Super Sweet And Creamy Pumpkin Soup |

This is a home made soup that my mum used to make and she never made it enough... I managed to get the recipe out of her and now it is a regular. I love it so much... you will too!! Ingredients:
1 kg of richly coloured butternut pumpkin |
1 onion |
4 cups chicken/beef or vegetable stock. |
1 tablespoon sugar |
2 teaspoons salt |
pepper |
1 tablespoon butter |
1/2 cup- 3/4 cup cream |
Directions:
1. Peel pumpkin and cut into pieces. Peel and chop onion. 2. Place both in a large saucepan, add stock, sugar, salt, pepper and butter and cook until soft. 3. Cool then place in a blender until smooth. 4. Lastly add the cream and mix well (add more seasoning if needed). 5. Heat but do not boil, serve immediately. 6. Garnish with chopped parsley or nutmeg. 7. ENJOY... I KNOW YOU WILL!! |
