Adjusted a recipe that I came across last year. It is very easy and quick. Also delicious. Ingredients:
1 15 ounce can butter beans, rinsed and drained (can substitue other beans) |
1 15 ounce can black beans (rinsed and drained) |
1 cup frozen green peas |
chopped red onion to taste, about 1/4 cup |
fresh basil, shredded (i have used the freeze-dried, tastes like fresh, when fresh is unavailable) |
12 grape tomatoes (can use other tomatoes, chopped) |
4 ounces cheese, cut into cubes or strips (smoked mozarella,etc., your choice) i like feta |
olives of your choice, i like kalamata |
sea salt and freshly ground black pepper |
dressing |
1/2 cup extra virgin olive oil |
2 tablespoons rice vinegar |
1 tablespoon sherry vinegar |
1 teaspoon dijon or whole grain mustard |
1/2 teaspoon sea salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. In a large bowl, combine beans, peas, onion and half the basil 2. Toss with half the dressing 3. Arrange on platter 4. Arrange tomatoes and cheese on top 5. Cover, refrigerate for about 15 minutes, or up to four hours 6. DRESSING 7. Combine all in a screw-top jar 8. Cover and shake well 9. Let stand at room temperature for about 30 minutes before serving 10. May pass dressing around when serving |
