Super Simple Pineapple Cake |

I picked this recipe up while living in Argentina from an incredible family down there. This is super simple and the syrup makes it a very moist and sweet cake. Enjoy! Ingredients:
2 cups flour |
1 1/2 cups sugar |
1 teaspoon baking soda |
1 teaspoon salt |
2 eggs |
1 (20 ounce) can crushed pineapple |
1/2 cup coconut flakes |
1/2 cup brown sugar |
1/4 slice margarine |
1/4 cup sugar |
1/8 cup milk |
1/2 teaspoon vanilla extract |
Directions:
1. Mix the dry ingredients for the cake. 2. Stir in the Eggs and Pineapple. 3. Pour the mixture into a 9x13 pan. 4. Sprinkle the Coconut and Brown Sugar over the top. 5. Bake at 350 degrees for 40 min-or until cake is slightly browned on top and passes the toothpick test . 6. Once the cake is out of the oven, mix all of the syrup ingredients in a saucepan and bring to a boil. 7. Pour hot mixture over the warm cake. 8. Make sure you let the cake sit for a few minutes to let the syrup get completely absorbed before serving. |
