Spicy and nourishing and most importantly simple! Ingredients:
1 medium carrot, diced |
1 medium onion, diced |
1 medium potato, diced |
1 medium cooking apple, diced |
2 tablespoons oil |
2 garlic cloves, crushed |
1 tablespoon curry powder |
300 ml tomato juice |
1200 ml vegetable stock |
Directions:
1. Heat oil and sauté apple and vegetables until the onion is transparent. 2. Add garlic and curry powder and cook for a further 2 minutes 3. Add all liquid and simmer for 30 minutes. 4. Liquidise and reheat if needed. |
