Super Simple & Fast Emerald (French) Green Lentils |

I was really curious to try green lentils for a while; I was mostly familiar with brown and red lentils but saw that green ones were usually pricey. I was able to get some bulk for cheap and was pleasantly surprised with their taste and texture. They're also pretty to look at! This is a super simple side dish for 2-3 people; can be easily multiplied if cooking for your family/a crowd. This goes great with some couscous or quinoa. If using a pressure cooker, cut the time in half or a little less. Ingredients:
1 cup green lentil |
1/2 teaspoon marjoram |
1 tablespoon fresh flat-leaf parsley (or 1/2 tsp dry) |
1 teaspoon olive oil (approx) |
salt and pepper, to taste |
Directions:
1. Boil 2 cups of water in a saucepan. Add the lentils and marjoram. If using dried parsley, add now too. Lower the heat. 2. Cover loosely and let cook for 20-30 minutes or until tender. 3. Remove any excess water if the lentils didn't absorb all of it, then put them into a serving bowl. If using fresh parsley, add now and mix well. 4. Drizzle a little olive oil evenly into the bowl (about 1 teaspoon or so, maybe a little less) and mix well. 5. Serve, salt and pepper to taste, and enjoy. |
