Super Simple & Delicious Quesadillas |

This recipe is one of my favorites when I want something quick and delicious. This can be made as a snack, or as a main dish for dinner paired up with some yellow rice. Also I have made this recipe using seasoned and precooked ground beef. Ingredients:
4 regular flour tortillas |
2 cups shredded monterey jack and cheddar cheese blend |
4 tablespoons thick & chunky salsa (preferably roasted vegetables) |
4 tablespoons mayonnaise |
1 tablespoon cayenne pepper |
1/2 tablespoon garlic powder |
1/2 tablespoon paprika |
Directions:
1. heat skillet on medium heat. place one flour tortilla in the skillet and add 1/2 cup of cheese to the tortilla. let cook unfolded for about 5-6 min or until cheese is completly melted. 2. while cheese melts mix the mayo, cayenne pepper, garlic powder and paprika together in a small bowl. 3. once cheese is melted spread 1 tbls of salsa and 1 tbls of the mayo mixture in the quesadilla. fold and let in cook for another minute fliping it after 30 seconds. 4. repeat with the next 3 quesadillas. 5. serve with prepared yellow rice or enjoy as is. |
