This salad is low GI and protein rich. Make a big one and keep adding goodies to eat as a main dish! This recipe is for the side dish version that my family enjoys.
Ingredients:
6 cups lettuce, torn into bite sized pieces
1/2 red bell pepper, chopped
1 medium cucumber, sliced
1/3 cup walnuts, chopped
1/4 cup pumpkin seeds
1 medium apple, chopped
1/2 cup chickpeas, canned is fine, rinsed and drained
Directions:
1. Combine all ingredients in a large salad bowl.
2. Toss and serve.
