If you like spinach this is a winner. I have always loved spinach so look for new ways to make it. This recipe is one I obtained from a bunco friend who served this at one of her parties alongside grilled red snapper and garlic parmesan potatoes. Read more . Very tasty. Enjoy Ingredients:
4 teaspoons extra virgin olive oil |
4 large cloves garlic minced or sliced thin |
1 pound well rinsed coarsely chopped spinach leaves |
4 teaspoons fresh lemon juice |
1 teaspoon freshly ground black pepper |
1/2 teaspoon salt |
2 tablespoons lightly toasted pine nuts |
Directions:
1. Heat wok then add oil then add garlic and stir until it reaches the point of fragrance. 2. Remove garlic cloves then add spinach leaves and stir fry until it starts to wilt. 3. Remove wok from heat then add lemon juice, salt, pepper and pine nuts. |
