This is perfect for a college student-cheap, fast, delicious, and nutritious Ingredients:
1 tablespoon olive oil |
1/2 onion, chopped |
2 chopped garlic cloves |
1 (8 ounce) can black beans, rinsed and drained |
1 cup jarred chunky salsa |
1 tablespoon fresh parsley or 1 tablespoon cilantro |
1/2 teaspoon cumin |
1 tablespoon taco seasoning |
1 tablespoon hot sauce |
2 cups white rice |
2 tablespoons shredded cheese (optional) |
Directions:
1. Sauté onion and garlic in oil. 2. Add beans and salsa. 3. Add seasonings to taste. 4. Simmer until heated through. 5. Serve over rice and garnish with cheese. |
