I use Chorizo sausage that has been cooked and put through the food processor. It helps distribute the flavor throughout the whole platter. Ingredients:
1 pound chorizo casings removed |
2 teaspoons chili powder |
2 teaspoons cumin |
pinch of salt |
1-2 small cans refried beans or bean dip-warmed |
1 12-ounce bag corn tortilla chips i use the assorted |
1 1/4 pounds monterey jack grated with or without jalapenos peppers |
2 cans of jalapeno pepper rings drained thoroughly |
1 large onion, chopped |
2 tomatoes, chopped |
1 6-ounce can black olives, chopped |
Directions:
1. Brown the sausage in a medium skillet. Drain. When cool enough to handle, put in food processor and pulse to a fine consistency. Return to pan. Add the chili powder, cumin and salt. Rewarm and set aside. 2. Spread a thin layer of refried beans or bean dip over the bottom of a platter or shallow, heat-proof bowl . 3. Then spread a layer of chips over the beans, top with a layer of cheese, sausage, onion, tomato, peppers and olives. Repeat until all the ingredients are used. I try to get 4 layers. 4. Bake at 375° for 15 minutes. Serve warm with sour cream and Guacamole Dip, if desired. |
