In the mood for mexican? try this!! This is from a little mexican restaurant in Swanton, Ohio Ingredients:
1 avocado |
1 tea. lemon juice |
1/2 cup finely chopped onion |
1/2 cup chopped tomato |
1/4 tea. salt |
1/8 tea.pepper |
1 can (15 oz.) pinto beans ( rinsed and drained) |
2/3 cup water divided |
2 table. vegetable oil |
1/2 pound ground beef |
1 tablespoon chili powder |
7 oz. tortilla chips |
8 oz. shredded cheddar cheese |
1 cup sour cream |
Directions:
1. In small bowl, mash the avocado with the lemon juice 2. Stir in the onion, tomato, salt and pepper set aside 3. Mash beans with 1/3 cup water 4. place in a skillet and cook until hot 5. stir in oil, remove from heat and set aside 6. In another skillet, brown beef ,and drain 7. Srir in chili powder and remaining water 8. cook until liquid evaporates 9. Line a baking sheet with foil 10. Arrange chips in a single layer 11. Top with bean and meat mixtures 12. Sprinkle with cheese 13. Bake 400 until cheese melts (4-5) minutes 14. Top with avocado mixture and sour cream 15. Serve immediately 16. ENJOY!!! |
