Best nachos ever. My husband and I have been known to make a meal out of this. Usually lasts us two or three nights unless I've made a few smaller ones! Ingredients:
1 lb. ground beef |
1 medium onion |
1 14-oz. can refried beans |
2 - 4-oz. cans chopped green chilies |
1/2 lb. shredded monterey jack cheese |
3/4 cup taco sauce |
1 medium avocado |
1 cup sour cream |
1 cup green onions, chopped |
1 cup green or black olives, chopped |
Directions:
1. Brown ground beef and onion. Season with salt. Spread refried b eans into shallow casserole or other oven-proof dish. Top with meat/onion mixture. Sprinkle with green chilies, then cheese. Drizzle taco sauce over cheese. 2. If making ahead, cover and chill at this point. 3. When ready, bake at 400 F. for 20 minutes. Remove from oven, spread mashed avocado and sour cream over all and garnish with green onion and olives. Serve immediately with tortilla chips. Reheats nicely. I also often make several little dishes of this recipe and freeze them at the cover and chill point so I can pull one out for a snack or for guests. I thaw it before heating. |
