A delicious, super healthy muffin recipe developed based on: Weight Watcher Points, Overall Healthiness, and TASTE. Ingredients:
1 3/4 cups whole wheat flour |
1/4-1/2 cup splenda granular, no calorie artificial sweetener (you control sweetness) |
2 teaspoons baking powder |
1/4 cup egg beaters egg substitute, original |
3/4 cup light vanilla soymilk |
2 teaspoons canola oil |
1 cup blueberries |
Directions:
1. Preheat oven to 400 degrees. Mix dry ingredients in medium bowl. Make a well in the center of the ingredients, add wet ingredients, and mix. Fold 1/2 of the blueberries into the batter, and pour into muffin tin. Top the batter with the remaining blueberries. Bake until golden (about 10-12 minutes). |
