A luscious home made Chrsitmas cake with a few shortcuts. Try it! Ingredients:
750g sun dried fruit mix |
1/2 cup or 125ml water |
1/3 cup or 80ml vegetable oil |
470g packet carror cake mix |
1/2 cup or 125ml sherry |
1 egg, lightly beaten |
100g packet slivered almonds |
Directions:
1. Preheat oven to 160deg C. Grease and line a round (20cm) or square pan. 2. Place fuit mix, water and oil into saucepan. Bring to boil and simmer, uncovered for 5 mins. Remove from heat. 3. Add icing sachet from mix and stir well. Set aside for 10 mins. 4. Mix sherry and egg into fruit with a wooden spoon. 5. Add cake mix and almonds, mixing well. 6. Pour into prepared pan and smooth surface. 7. Bake 90 mins, until cooked when tested with a skewer. 8. Cool in pan. 9. Decorate! |
