Ingredients:
8 cup(s) cups mixed salad greens |
1 pound(s) salmon fillet, poached |
1 1/2 cup(s) fresh asparagus, par-boiled or lightly steamed |
1 cup(s) cup fresh blueberries |
1/2 cup(s) almonds or walnuts, chopped, toasted |
lemon zest to garnish |
2 tablespoon(s) tablespoons white wine vinegar |
1/2 cup(s) olive oil |
1 tablespoon(s) fresh chives |
Directions:
1. Spread salad greens into large salad bowl. Tear salmon into medium pieces and arrange on greens. Sprinkle asparagus, blueberries and chopped nuts throughout the bowl. Top with lemon zest. 2. In a jar with a lid, add all vinaigrette 3. ingredients. Salt and pepper to taste. Shake well. Stir1/2 to 3/4 of the dressing into the bowl.
