I prefer Shipman's Tortilla Soup II, but my wife loves this one, and it is very easy to make! She got it from a friend after a party, and it is great for entertaining. Ingredients:
2 (16 ounce) cans cream-style corn |
2 (10 ounce) cans rotel, diced |
2 (16 ounce) cans chicken broth |
4 chicken breasts, boiled and diced |
1 teaspoon cumin |
1/2 bunch cilantro, chopped fine |
2 knorr tomato bouillon with chicken flavor cube |
1 (16 ounce) can black beans |
salt and pepper |
salted tortilla chips |
Directions:
1. Put all ingredients together and simmer 20 minutes. 2. Top with tortilla chips, sour cream, grated cheese, avocado, etc. |
