A quick and easy spicy tomato soup recipe. This is a great basic soup, you can make it fancier by adding chopped vegetables (I like spring onions), tofu or rice noodles. You can make it creamier by adding silken tofu or a slice of old bread and blending the soup. Ingredients:
1 tablespoon olive oil |
2 garlic cloves |
2 tablespoons red wine vinegar |
500 ml crushed tomatoes |
500 ml vegetable stock |
1 teaspoon cayenne |
Directions:
1. Saute garlic in olive oil. 2. Add vinegar and boil for 30 seconds. 3. Add tomatoes and stock, bring to a boil and let simmer for five minutes. 4. Add cayenne to taste. |
