Super Easy Tomato Fritters |

A quick, easy, side dish - goes well with beef. Ingredients:
2 cups tomatoes (firm, not too ripe), diced |
1/2 cup diced onions |
1 cup corn meal |
1/2 tsp salt |
1/2 tsp garlic powder |
1 tsp dried basil (double this amount if using fresh) |
water, as needed |
1 cup vegetable oil |
Directions:
1. Combine diced tomatoes with next 5 ingredients. Add just enough water to make a stiff batter. Heat oil in skillet over medium heat, then drop tomato mixture into pan by heaping tablespoons. Fry until golden brown on both sides, remove from skillet and drain on paper towels. Serve hot. / |
