Super Easy Tangy Roasted Pork Loin |

Just a few ingredients and you'll have a tangy, tasty pork loin. Ingredients:
1 lb boneless pork loin, can use tenderloin |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/2 teaspoon thyme |
1/3 cup dijon mustard |
1/4 cup pineapple preserves |
2 tablespoons honey |
Directions:
1. Preheat oven to 350. 2. Place pork in a roasting pan and sprinkle all sides with the salt, pepper and thyme. 3. Mix Dijon, pineapple preserves and honey and pour over the pork. 4. Loosely cover and roast for about 60 minutes, (basting with sauce every 20 minutes) or until internal temp reaches 160°F. 5. If you're using tenderloin, it will cook quicker. |
