A delicious concoction, and super easy - and because you make it with shrimp, people think you made an extra effort... I love the versatility of this recipe (see alterations below) Ingredients:
1 cup rice |
mushrooms (10-15 sliced, or as many as you have on hand) |
1 tsp butter or margarine |
shrimp, cooked frozen, deveined, tail removed (or you can do the work if you'd rather) |
mushroom soup, 1 can (condensed) |
peas or corn, frozen (1/2 to 1 cup, again, as many as you like) |
1 tsp chili powder or steak spice (yes, i use steak spice) |
1/2 tsp basil, thyme, oregano, or mix |
Directions:
1. Cook your rice according to directions (approximately 20 minutes if using long grain) 2. While rice is doing its thing, melt butter in large skillet, when melted, fry up your mushrooms 3. Once mushrooms have become soft, add shrimp 4. When shrimp thaws and becomes soft, add everything else 5. Note: If you are using fresh shrimp, you may need to add water to above step, use your judgement 6. Simmer until rice is finished 7. Serve your creation over rice |
