This is a geat soup. I've eaten it for breakfast, lunch, dinner and desert. It can be a bit pricey, though, depending on how much the shrimp is. Can also be served without Clamato and El Pato, served with chips. Ingredients:
2.5 lbs.cooked salad shrimp or cooked jumbo shrimp |
3 avocados |
2 bunches green onion |
2 cucumbers |
1 bunch cilantro |
2 large tomatos |
1 16oz. bottle of clamato |
1 7.75 can of el pato |
garlic optional |
tapatio optional |
Directions:
1. Mince the cilantro (and garlic if used) 2. Chop up the rest of the veggies. The chunkier, the better. 3. Throw in the shrimp 4. Pour entire can of El Pato 5. Pour in Clamato. I usually leave enough in the bottle to mix with a 40oz. of Bud. 6. Chill in refrigerator for 30 mins. 7. Serve with crackers or tortilla chips. 8. Add Tapatio If needed 9. This soup is even better the following day. Completely chilled and the shrimp are plump. |
