Super Easy Paleo Stuffed Peppers! |

Ingredients:
2 whole(s) organic bell peppers |
1 pound(s) grass fed ground beef |
2 slice(s) bacon- nitrate and nitrite free |
2 organic, cage free omega 3 eggs |
2 tablespoon(s) butter, olive oil, walnut oil (fat of your choice) |
Directions:
1. Preheat the oven to 400 degrees 2. Cut the top off of the bell peppers and hollow out 3. Brown ground been in a medium sized pan 4. Finely chop bacon and add to ground beef 5. Add desired seasonings (Salt, pepper, red pepper flakes) 6. Place in small baking dish and bake for 15 minutes or until bell peppers look softened 7. Meanwhile, melt butter in small pan and add eggs 8. Cook over medium heat on one side until golden brown and crunchy, flip for 30 seconds. 9. Place eggs on top of stuffed peppers and VOILA! 10. Note- I served these with roasted Brussels sprouts and shared the 400 degree oven with the peppers, perfect! |
