Super Easy Minestrone Soup |

Here's one of the quickest and easiest recipes for a good Minestrone soup. This is great for those cold nights when you come home from work and really don't want to cook. Its an inexpensive soup to make and with the use of a jarred or canned marinara sauce, you'll be surprised just how easy this is to make! Read more ! Ingredients:
1 large jar of marinara sauce or your favorite spaghetti sauce |
1 can of garbanzo beans, drained, rinsed |
1/2 to 1 pound or more of cooked chicken, beef, turkey or any leftover meat you have available in the fridge. *you can add 2 cups of frozen meatballs after the soup comes up to a boil. |
1 cup of chopped celery cut into large chunks (1 inch) |
1 large onion cut into large chunks |
1/2 cup of dry pasta of your choice. (macaroni noodles, broken pieces of spaghetti, small round noodles, flat noodles, etc.) |
1 tsp oregano |
1 tb chopped, dried or dehydrated garlic |
6 cups of boiled water |
*i like to add whole leaf spinach to the soup. i use 1/2 cup of frozen spinach or a big handful of fresh spinach right before serving. |
this soup is great served with hot crusty rolls or breadsticks. you can sprinkle the top with either freshly shredded or dried parmesan cheese. you can also top with croutons. you can take any leftover pizza, heat it up and cut small pieces of this to add to the top of the soup before serving. its a good way to use up leftovers |
Directions:
1. Easy! 2. With the 6 cups of water at a boil in a large pot, add the whole jar of marinara sauce and stir. 3. Add the rest of the ingredients all at once and reduce heat to a medium low flame and cook for 30 minutes. 4. Serve! |
