This is my favorite vegetable soup, the color, flavor, and aroma are devastatingly attractive, just don't wear white while eating it! Ingredients:
1 1/2 pounds beets |
1 pound parsnips or celariac |
1/2 head celery chopped or celariac trim (will explain in method) |
1-2 med onions chopped |
1 pound carrots chopped |
1 gallon water |
black peppercorns whole |
2 bay leaves |
yoghurt or sour cream for garnish |
Directions:
1. Peel and trim your beets and celariac or parsnips iinto large squares, and save the trim 2. dice the large squares into cubes 1/2 inch on a side set aside all your cubes 3. pit your chopped veg, trimmings and seasonings in a large stock pot and add the gallon of water, simer gently untill the veg is very soft and pour through a fine sieve retaining the stock, 4. discard the veg 5. add your cubes and gently simmer them untill they are tender salt to taste and serve with a dollop of sour cream or yogurt |
