Super Easy Black Bean Burritos |

I use the minute rice brown rice cups you can prepare in the microwave. They make these burritos even easier! As for the toppings, you can really add anything you'd like, these are just my suggestions! Ingredients:
1 (15 ounce) can black beans, drained and rinsed well |
1/2 cup salsa |
1 cup cooked brown rice |
4 flour tortillas, burrito size |
1 cup lettuce |
1 tomato, diced |
1 avocado, diced or mashed |
Directions:
1. Combine the black beans, salsa, and the rice in a saucepan and simmer for 5 minutes. 2. Remove from heat, cover, and let sit for 5 minutes. 3. In an ungreased skillet (or microwave), heat a tortilla until warm. 4. Spread a line of the bean mixture down the center. 5. Top with lettuce, tomato, avocado, and more salsa if desired. 6. Roll up and enjoy! |
