These pancakes are so easy and yummy, you will want to make them for dinner. I know you are thinking rum, in pancakes? , just try it, it is so good. The rum make them so moist. Don't worry the alcohol cooks out. Ingredients:
instant pancake mix-like krustiz, enough for 10 pancakes |
1 cup smashed ripe banana |
1 banana sliced |
1 teaspoon ground cinnamon |
2 tablespoons rum |
real butter |
crushed pecans |
maple syrup |
Directions:
1. Prepare pancake mix according to directions, leaving it a little dry. 2. Add bananas, cinnamon and rum. Mix just till blended. 3. Heat your skillet over medium-high heat for about 3 minutes. Using a ladle, pour batter onto skillet, making pancakes about 4 to 5 inches across. Let cook until bubbles form and pop on the surface of the pancake. Flip over and let sit about 30 seconds. Remove and butter. Continue process until all batter is used. 4. Put two pancakes on a plate, add a few sliced bananas, sprinkle with pecans, pour maple syrup over the top and enjoy. 5. You can add whipping cream, powered sugar or whatever you like. Just experiment. |
