Super Easy and Wonderful Microwave Toffee |

I had been craving toffee and decided to make it as part of my cookie/candy packages this year. I ran across a recipe that I tweaked a bit. YUM ... Enjoy! Ingredients:
3/4 cup heath bits 'o brickle toffee pieces |
1 cup sugar |
1/4 cup water |
1 teaspoon salt |
1/2 cup butter (1 stick) |
3/4 cup chocolate chips |
Directions:
1. Butter a baking sheet. I used my Tupperware Wonder Mat for easy clean-up and didn't need the extra butter. 2. Sprinkle 1/2 cup of Heath Bits in a 9 circle on your Wonder Mat. 3. Butter the top edges of a 2 quart microwave safe casserole pan. 4. Place the butter, salt, sugar and water in the caserole. DO NOT STIR! 5. Place the dish in the microwave on high for 6 to 8 minutes. Check it after 7 minutes. 6. Continue cooking a minute at a time until the mixture just begins to turn tan. You need to watch it here. The first batch I tried, I checked at 6 minutes and then had to run 3 more one minute intervals. The second batch I checked at 7 minutes and it was perfect. 7. REMEMBER - DO NOT STIR. 8. Pour the mixture over your Heath Bits. 9. Immediately sprinkle the chocolate chips on top and let them sit for one minute. 10. After one minute, spread the chips out with a rubber spatula. 11. Sprinkle the remaining Heath Bits over the top. 12. Place in the fridge until cooled. 13. After the toffee is cooled, break into bite sized pieces. 14. Toffee can be frozen for up to a month. |
