Three ingredients...that is it!!! How something so simple could be so good! I have been making this recipe since it came out in Bon Appetit in l998. It is so uncomplicated...let the other ingredients of the pizza speak for themselves!!! The quality of your sauce will depend on the quality of tomatoes you use - or - use fresh roma tomatoes from your garden Ingredients:
28 ounces tomatoes in puree (crushed preferably italian, about 3 1/2 cups) |
3 tablespoons olive oil |
1 pinch sugar |
Directions:
1. In a large saucepan bring tomatoes and oil to a simmer and simmer, uncovered, stirring occasionally, 20 minutes, or until sauce is reduces to about 2 1/2 cups. 2. Season sauce with salt and cool to room temperature. 3. (Sauce keeps, covered and chilled, 5 days.). |
