Super Asian Chicken Broth |

As easy as 1-2-3!!! Ingredients:
4 cups store bought chicken stock |
1 garlic clove, chopped |
1 tablespoon ginger, shredded |
1 red chile, sliced |
100 g rice noodles |
2 chicken breast fillets |
3 green onions, chopped |
60 g snow peas, sliced |
2 teaspoons soy sauce |
1/2 cup bean sprouts |
1/3 cup mint, finely chopped |
1/3 cup coriander, finely chopped |
lime wedge |
chili sauce |
Directions:
1. Put first four ingredients in saucepan. Bring to boil. 2. Simmer uncovered for 5 minutes. 3. Meanwhile pour boiling water over noodles and stand 5 minutes. Drain. 4. Add chicken fillets sliced to stock mixture, simmer 2 minutes. 5. Stir in green onions, snow peas and soy sauce. 6. Divide noodles amongst four bowls, top with soup, bean sprouts, herbs. 7. Serve with lime wedges and extra chilli sauce if desired. |
