Delicious & Finnish! Different than North American tea-time cake, but just as good. Light and sweet. Ingredients:
1/2 cup brown sugar |
2/3 cup white sugar |
1 3/4 cups unbleached flour |
1 cup whole wheat flour |
1/4 cup canola oil |
1/2 teaspoon nutmeg |
1 1/2 teaspoons cinnamon |
1 cup plain soymilk |
1 tablespoon rice wine vinegar |
1 teaspoon baking soda |
1 teaspoon baking powder |
3/4 cup applesauce |
1/2 teaspoon salt |
2 tablespoons sugar |
1/2 teaspoon cinnamon |
Directions:
1. Preheat oven to 350ÂșC. Mix sugar, flour, oil and nutmeg in a large mixing bowl. Remove 3/4 cups of mixture and place in small bowl. Add cinnamon and nuts to small bowl. Set aside. Mix remaining ingredients and 1 cup of small bowl mixture in large bowl. Grease square cake pan. Pour large bowl mixture inches Cover in remaining small bowl mixture. Bake for 40-50 minutes. Top finished cake with cinnamon sugar. |
