This was my mother's recipe. The reason she put the hard-boiled eggs inside the meatloaf, was to get me to eat when I was a small child. She'd say, Look, there's the sun . Others in the family say that it was to enable her to stretch the meat & keep the cost down. Ingredients:
3 lbs ground beef (80% lean) |
1 onion (chopped) |
salt and pepper |
granulated garlic powder |
1 teaspoon tarragon |
1 teaspoon basil |
1/2-3/4 cup plain breadcrumbs |
2 eggs (raw) |
4 -6 large eggs (hard-boiled) |
1 (16 ounce) can tomato sauce |
1 cup ketchup |
2 teaspoons worcestershire sauce |
1/2 cup red wine |
2 tablespoons dried parsley flakes |
Directions:
1. In a large bowl mix together ground round, salt, pepper, garlic, tarragon, basil, bread crumbs, raw eggs, Worcestershire, red wine& parsley flakes. 2. In a 13” x 9” pyrex baking dish form half of the meat mixture into a free form oval shape. 3. Place hard-boiled eggs, end to end, lengthwise down the center of the meat. 4. Arrange the remaining half of meat to cover the eggs… Mix the tomato sauce& ketchup& smother it over the top of the meatloaf… Preheat oven to 350 degrees& bake, uncovered, 1 1/2 hours… Slice& serve. 5. so that each slice has a slice of hard-boiled egg that resembles the sun. |
