Sunshine-fresh Mexican Veggie Salad |

This recipe began right here at GroupRecipes: Spicy Fruit And Veggies With Lime but I don't combine fruit/veggies. Ingredients:
1 small jicama, peeled and julienned |
1 large cucumber, peeled and julienned |
2 bell peppers, different colors, julienned |
handful of fresh cilantro, chopped |
1/2 handful of fresh mint, chopped |
1 t kosher salt |
freshly-ground pepper |
1/4 t red pepper or pequin chile powder |
juice of 2 fresh limes |
lime wedges |
optional: 1/2 cup to 1 can of great value (wal-mart brand) tex-mex fire roasted tomatoes (found sold next to the ro-tel) |
Directions:
1. Place first 5 ingredients into a bowl; toss. 2. Drizzle with lime juice. 3. Sprinkle with salt and peppers. 4. Taste it. If you think it needs the tomatoes, add them now (amount dependent on how much you like). 5. Serve immediately with lime wedges. |
