The Horn of the Moon by Ginny Callan Serve this with an herb dressing. Ingredients:
1/4 cup tahini |
1 tablespoon lemon juice |
1/2 teaspoon tamari |
4 tortillas (or chapatis) |
4 teaspoons sunflower seeds |
12 slices colby or 12 slices cheddar cheese |
4 cups spinach leaves |
1 cup alfalfa sprout |
Directions:
1. Mix tahini with lemon juice in measuring cup, add tamari and stir well. 2. Lay chapatis out on a counter. Spread mix down the center of each chapati, using about 1 tablespoon per chapati. 3. Sprinkle 1 teaspoon sunflower seeds over mix on each chapati. 4. Lay slices of cheese over sunflower seeds, 3 slices per chapati. 5. Next lay spinach leaves over cheese. And top with alfalfa sprouts. 6. To eat, roll lengthwise until you have a rolled-up log. |
