Sunshine carrots. Ingredients:
5 medium carrots |
1 tablespoon sugar |
1 teaspoon cornstarch |
1/4 teaspoon salt |
1/4 teaspoon ground ginger |
1/4 cup orange juice |
2 tablespoons butter or margarine |
Directions:
1. Cut carrots crosswise on the bias in 1 inch chunks. 2. Cook, covered, in boiling salted wate till just tender, about 20 minutes; drain. 3. Meanwhile, combine next 4 ingredients in small saucepan. 4. Add oranje juice; cook, stirring constantly, till mixture thickens and bubbles. 5. Boil 1 minute. 6. Stir in butter. 7. Pour over hot carrots, tossing to coat evenly. 8. Serves 4. |
