I love healthy, sweet salads. This has yogurt as a dressing and lots of fruit. This can also be a healthy snack. Ingredients:
3 cups grated carrots |
1 cup chopped tart, crisp apple |
1 cup drained crushed pineapple |
1 cup golden raisins |
1/4 cup raw sunflower seeds |
1/4 cup chopped pecans |
1 8 oz container active-culture vanilla yogurt. |
Directions:
1. Combine all ingredients except pineapple and yogurt. 2. Stir pineapple and yogurt together and pour over salad mixture and mix together. 3. Stir and chill for 1 hour before serving. 4. NOTE: Can purchase pre-grated carrots. |
