This is one of the easiest dishes to whip up, and it feeds a lot. And it's versatile, you can use whatever you have as mix-ins. I will share what I use most of the time, but feel free to get creative here! ((will post pic soon! Read more !)) Ingredients:
one medium yellow onion, diced |
1 cup of sliced mushrooms |
1/2 lb. of breakfast sausage (you can smoosh up links or patties if you have that) |
1 cup of ham, cubed |
small can of diced green chiles |
dash of cayenne pepper |
2 cups cottage cheese, any style |
2 cups monterey jack or cheddar cheese (( or both! )) |
12 eggs |
1/4 cup all purpose flour |
1 tsp. baking powder |
1/2 cup melted butter or margarine |
Directions:
1. Over medium high heat, fry the sausage until some fat from the meat is rendered. (If the sausage is lean and you need a little additional fat to cook with, add a pat of butter or a splash of olive oil) 2. Toss in your diced onion, sliced mushrooms, cubed ham and cook til browned. 3. Add the can of chopped green chiles. 4. At this point, I like to add a few dashes of cayenne pepper, but you can omit if you like. 5. Set this mixture aside for now. 6. In a large bowl, combine the flour, baking powder, eggs, cottage cheese, shredded cheese and melted butter/margarine. 7. Lightly spray a 9 x 13 baking dish with nonstick spray. 8. Spread the sausage mixture in the bottom of the baking dish. 9. Pour the egg mixture over the top. 10. In a 350 degree oven, bake for 35 to 40 minutes, til eggs are set and lightly browned. 11. Delicious served with a side of salsa! I've also made this with fresh asparagus mixed in...the possibilities are endless! 12. Enjoy!! |
