By Mr. Love that these have no cheese. One of our family favorites. Prep time is a guess-timate. Ingredients:
2 1/2 cups all-purpose flour, divided |
1 cup butter or 1 cup margarine, softened |
1 cup confectioners' sugar, plus extra for topping |
2 cups granulated sugar |
4 eggs |
1/2 cup lemon juice |
1 teaspoon lemon extract |
Directions:
1. Preheat the oven to 350°F 2. In a medium bowl, combine 2 cups flour, butter, and confectioners’ sugar; mix until crumbly. 3. Press into the bottom of a 9”x13” baking dish to form and crust. 4. Bake for 15 minutes. 5. Meanwhile, in a large bowl with an electric beater on medium speed, beat the remaining 1/2 cup flour, granulated sugar, eggs, lemon juice, and lemon extract until well blended. 6. Pour over the hot crust. 7. Bake for 25 to 30 minutes, or until set. 8. Allow to cool, then cut into squares. 9. Dust with extra confectioners’ sugar and serve. |
