Ever since developing a wicked peanut allergy I've been trying to fill a gaping hole in my diet (I LOVEd peanut butter). A coworker turned me onto sunflower butter and I started experimenting with breakfast and brunch ideas.
Ingredients:
4 slices whole wheat bread
1/4-1/2 cup shredded carrots (depends on taste)
1 apple, sliced
4-6 tablespoons creamy sunflower butter (amount will depend on taste).
Directions:
1. Spread each slice of bread with 1-2 (or 3) tablespoons of sunflower butter
2. Add shredded carrots to two of the pieces
3. Layer apple on the other slices
4. Smoosh together
5. Slice and enjoy
6. Option: grill using earth balance margin but be wary of super-melted/runny butter.
