Sundried Tomato and Bacon Risotto |

Tasty meal that can be modified with healthier bacon to clarify 1 cup uncooked brown rice plus 2 cups chicken broth (=12g stock in 2cups water) Ingredients:
5 slices turkey bacon |
12 g chicken stock |
3 cups mushrooms, sliced |
650 g cooked brown rice |
19 g tomatoes, sundried, blanched |
1 tsp oregano |
2 tsp olive oil |
1/2 cup parmesan cheese, grated |
Directions:
1. Slightly undercook 1 cup brown rice in chicken broth 2. Slice ~8 sundried tomatoes and pour boiling water on them, let stand 2 mins then drain 3. Cook bacon in large skillet on medium-high heat 5 min. or until crisp, stirring occasionally. Drain bacon; discard drippings. Return bacon to skillet. Add mushrooms to skillet; cook 3 min., stirring occasionally. NOTE: if using cooked turkey or chicken bacon add bacon and mushrooms at same time 4.
